Ingredients
Crust
2 cups all-purpose flour
½ cup granulated sugar
1 cup cold butter, cubed
Cheesecake Layer
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Apple Layer
2 cups diced apples (Granny Smith or Honeycrisp)
¼ cup brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
1 tablespoon lemon juice
Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan. In a bowl, combine flour and sugar, then cut in butter until crumbly. Press half of the mixture firmly into the pan and bake for 12–15 minutes until lightly golden. In another bowl, beat cream cheese and sugar until smooth, then add eggs and vanilla and mix well. Spread cheesecake mixture evenly over the warm crust. Toss apples with brown sugar, cinnamon, nutmeg, and lemon juice, then spoon evenly over the cheesecake layer. Sprinkle remaining crust mixture on top. Bake for 35–40 minutes until set and lightly golden. Cool completely, then chill before slicing into bars.
