Tips for Success
Use overripe bananas for the best natural sweetness and moisture. Don’t overbake—remove from the oven when edges are lightly golden and center is just set. Let bars cool completely before slicing to prevent crumbling. Line your baking pan with parchment for easy lifting and clean edges.
Ingredients
2 ripe bananas, mashed
1/2 cup creamy peanut butter
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1 1/2 cups old-fashioned rolled oats
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup chocolate chips or other add-ins (optional)
Directions
Preheat the oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking pan with parchment paper. In a large bowl, combine mashed bananas, peanut butter, honey, and vanilla. Stir until smooth. Add oats, cinnamon, and salt, mixing until fully incorporated. Fold in chocolate chips or any desired mix-ins. Spread the mixture evenly in the prepared pan. Bake for 20–25 minutes, or until the edges are golden and the center is firm. Cool completely in the pan before slicing into bars.
Additional Tips or Variations
Add chia seeds, flaxseed, or protein powder for a nutrition boost. Use almond or cashew butter instead of peanut butter for a different flavor. Stir in raisins, cranberries, or coconut flakes for extra texture. For a dessert-like twist, drizzle with melted chocolate once cooled.
