Ingredients
2 cups cooked chicken breast, chopped or shredded
½ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
½ cup celery, diced
¼ cup red onion, finely chopped
Salt and pepper to taste
Optional: ¼ cup chopped pecans or walnuts, ¼ cup halved grapes or dried cranberries
Directions
In a large bowl, combine the chopped or shredded chicken, celery, red onion, and any optional add-ins. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Pour the dressing over the chicken mixture and stir gently until well combined. Taste and adjust seasoning if needed. Cover and chill in the refrigerator for at least 30 minutes before serving.
Additional Tips or Variations
Substitute Greek yogurt for half the mayo for a lighter version. Add chopped fresh herbs like dill or parsley for extra flavor. Use rotisserie chicken for convenience. For a sweet-savory twist, add a diced apple or pineapple chunks.
