Ingredients
12 ounces pasta (rotini or bowtie)
8 slices bacon, cooked and crumbled
1 1/2 cups cherry tomatoes, halved
2 cups chopped romaine or iceberg lettuce
1/2 cup shredded cheddar cheese (optional)
1/4 cup chopped green onions
For the dressing
3/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
- Cook the pasta according to package instructions until tender. Drain and rinse with cold water to cool completely.
- In a large bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, green onions, and shredded cheese if using.
- In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper.
- Pour the dressing over the pasta mixture and toss until evenly coated.
- Gently fold in the chopped lettuce just before serving to keep it crisp.
- Chill in the refrigerator for about 30 minutes if desired, then serve.
