BLT PASTA SALAD

Ingredients

12 ounces pasta (rotini or bowtie)

8 slices bacon, cooked and crumbled

1 1/2 cups cherry tomatoes, halved

2 cups chopped romaine or iceberg lettuce

1/2 cup shredded cheddar cheese (optional)

1/4 cup chopped green onions

For the dressing

3/4 cup mayonnaise

1/4 cup sour cream

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package instructions until tender. Drain and rinse with cold water to cool completely.
  2. In a large bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, green onions, and shredded cheese if using.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper.
  4. Pour the dressing over the pasta mixture and toss until evenly coated.
  5. Gently fold in the chopped lettuce just before serving to keep it crisp.
  6. Chill in the refrigerator for about 30 minutes if desired, then serve.
