While chocolate treats are always a favorite, sometimes a lighter, creamier, and fruitier dessert is just what you need. With a bounty of blueberries in my fridge, I decided to create something irresistible: Blueberry Pie Bars. These bars are a delightful blend of blueberry crumble and blueberry pie, offering a perfect balance of flavors.

Blueberry Pie Bars
Ingredients:

For the crust and topping:

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, chilled and cubed
1 teaspoon vanilla extract
For the filling:

2 large eggs
3/4 cup granulated sugar
1/2 cup sour cream
1/3 cup all-purpose flour
1/4 teaspoon salt
3 cups fresh blueberries
Preparation:

Preheat the Oven:

Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or nonstick spray. Set aside.
Prepare the Crust:

In a large bowl, use an electric mixer to combine the flour, sugar, salt, chilled butter, and vanilla extract until the mixture becomes crumbly.
Set aside 1 cup of this crumbly mixture for the topping.
Firmly press the remaining mixture into the prepared baking dish to form the crust.
Bake the crust for 15 minutes.
Make the Filling:

While the crust is baking, prepare the filling. In a large clean bowl, beat the eggs with an electric mixer until frothy.
Add the sugar, sour cream, flour, and salt, mixing until thoroughly combined.
Gently fold in the blueberries.
Assemble the Bars:

Spoon the filling evenly over the baked crust.
Sprinkle the reserved 1 cup of crust mixture over the filling.
Bake:

Bake in the preheated oven until the top is golden brown, about 45-55 minutes.
Cool and Serve:

Allow the bars to cool for 1 hour before slicing and serving. Enjoy!
