2 cups all-purpose flour
1/2 cup granulated sugar
1/2 tsp salt
1 cup unsalted butter (cold, cubed)
For the blueberry filling
3 cups blueberries (fresh or frozen)
1/2 cup sugar
2 tbsp cornstarch
1 tbsp lemon juice
1 tsp lemon zest
1 tsp vanilla extract
Instructions
Preheat your oven to 180°C
Line a baking pan with parchment paper
In a bowl, mix flour, sugar, and salt
Add cold butter and mix until crumbly
Press about two-thirds of the mixture firmly into the bottom of the pan to form the crust
