BROCCOLI SLAW

Ingredients

4 cups broccoli slaw mix (shredded broccoli stems, carrots, and cabbage)

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

2 tablespoons honey or sugar

1/4 teaspoon salt

1/4 teaspoon black pepper

1/3 cup dried cranberries

1/3 cup sunflower seeds or sliced almonds

1/4 cup finely chopped red onion (optional)

Instructions

  1. In a large bowl, add the broccoli slaw mix, dried cranberries, sunflower seeds, and red onion if using.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
  3. Pour the dressing over the broccoli mixture.
  4. Toss everything together until the slaw is evenly coated with the dressing.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  6. Stir again before serving and adjust seasoning if needed.
