Ingredients
1 lb ground chicken
1 tablespoon olive oil
1 small onion, diced
1 small green bell pepper, diced
1 small red bell pepper, diced
2 cloves garlic, minced
1 tablespoon tomato paste
1/2 cup tomato sauce
1 tablespoon Worcestershire sauce
1–2 teaspoons Cajun seasoning (to taste)
1/4 teaspoon smoked paprika
Salt and pepper to taste
4 sandwich buns, toasted
Optional: sliced pickles, shredded cheese, or coleslaw for topping
Directions
Heat olive oil in a large skillet over medium heat. Add diced onion and bell peppers, cooking until softened, about 5 minutes. Add garlic and cook for 1 minute more. Stir in ground chicken and cook until browned and cooked through, breaking it apart with a spoon as it cooks. Stir in tomato paste and cook for 2 minutes, then add tomato sauce, Worcestershire sauce, Cajun seasoning, smoked paprika, salt, and pepper. Let simmer for 5–7 minutes, stirring occasionally, until thickened. Spoon mixture onto toasted buns and serve hot with your favorite toppings.
Additional Tips or Variations
Swap ground chicken for ground turkey or beef. Add a splash of hot sauce for extra heat. Mix in corn or black beans for a Tex-Mex twist. Top with melted pepper jack cheese for even more flavor. Serve open-faced on Texas toast or with lettuce wraps for a low-carb version.
