Ingredients
For the Cookies:
• 1 ½ cups all-purpose flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp ground cinnamon
• ¼ tsp ground nutmeg
• ½ cup unsalted butter, softened
• ½ cup brown sugar, packed
• ¼ cup granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 cup finely grated carrots
• ½ cup chopped walnuts or pecans (optional)

• 4 oz cream cheese, softened
• 2 tbsp unsalted butter, softened
• 1 cup powdered sugar
• ½ tsp vanilla extract
Instructions
1. Preheat Oven & Prepare Dough:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients:
In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. Cream Butter & Sugar:
In another bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla, mixing well.
4. Combine Wet & Dry Ingredients:
Gradually add dry ingredients to the wet mixture. Fold in grated carrots, nuts, and raisins if using.
5. Bake Cookies:
Scoop dough onto the prepared baking sheet. Bake for 10-12 minutes until edges are golden. Let cool completely.
6. Make Frosting:
Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
7. Frost & Serve:
Spread or pipe frosting onto cookies. Enjoy!
