Chicken and Broccoli Stir Fry

I love chicken! Yes, I’m guilty! As you all know, I always try to come up with new recipes to enjoy my chicken, and this fried chicken and broccoli blew my mind yesterday, so I want to share it with you guys.

This recipe for chicken and broccoli stir fry is a classic dish of chicken sauteed with fresh broccoli florets and coated in a savory sauce. You can have a healthy and easy dinner on the table in 30 minutes! Chicken and Broccoli Stir-Fry made with lean white meat and lots of broccoli in a ginger and garlic stir-fry sauce that’s an easy and quick weeknight meal or the perfect meal prep recipe for easy lunches all week long.

It’s been one of my go-to quick and healthy dinner standbys for years and years now.  And, since I first posted this recipe on the blog four years ago, thousands of you have now also made and loved it, and reported back that it’s one of your faves too.  Understandably!  This one is incredibly quick and easy to make, the zesty stir-fry sauce is made with simple ingredients you like keep stocked your pantry, and that classic duo of chicken and broccoli always has a way of hitting the spot.  Simple and healthy stir-fry FTW! Better than takeout, and healthier too – this 30-minute Chicken and Broccoli Stir Fry is bursting with rich, savory flavor and pleases even the pickiest eaters. Chicken and Broccoli Stir Fry is an excellent go-to lunch or dinner option.  You know those busy busy days when you need a meal on the table quickly (and you’ve literally got nothing to go to at 5pm)… this is going to be your saving grace!

You’ll Need:

1 pound of boneless skinless chicken breast cut into 1 inch pieces.
2 cloves of finely chopped garlic.
2 tsps of finely chopped ginger.
1 cup of chicken broth.
3 tbsps of soy sauce.
2 tsps of sugar.
2 cups of broccoli flowerets.
2 tsps of cornstarch.

How to:

Over medium high heat, heat a sprayed 12 inch nonstick skillet with cooking spray and add in the chicken, garlic and ginger fry until brown for 2 to 3 minutes.
Add ¾ cup of broth, soy sauce and sugar and cook covered for 5 minutes stirring halfway.
Add in broccoli and cook covered for an additional 5 minutes. Stir occasionally.
In a small bowl, mix together the ¼ cup of broth with the cornstarch and pour in the skillet.
Cook while stirring to thicken the sauce.

Easy, peasy and delicious! Fried broccoli adds an amazing flavor to my chicken, it’s so delicious guys, I’m telling you! I had this with a warm vegetable salad it was just perfect.
