Chicken Fried Steak and Gravy

Ingredients:

For the steak:

  • 4 cube steaks (tenderized beef)
  • 1 ½ cups all-purpose flour
  • 2 eggs
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper (to taste)
  • Oil for frying

For the gravy:

  • 3 tbsp pan drippings (or butter)
  • 3 tbsp flour
  • 2 cups milk
  • Salt and black pepper (to taste)

Instructions:

  1. Season the cube steaks with salt and pepper.
  2. In one bowl, mix flour with garlic powder and onion powder.
  3. In another bowl, whisk eggs and buttermilk.
  4. Dredge each steak in flour, dip into the egg mixture, then back into the flour. Press well for a thick coating.
  5. Heat oil in a pan over medium heat.
  6. Fry steaks for 3–5 minutes per side until golden brown and crispy. Remove and set aside.
  7. For the gravy, remove excess oil but keep about 3 tbsp drippings in the pan.
  8. Stir in flour and cook for 1–2 minutes until golden.
  9. Gradually whisk in milk, stirring constantly to avoid lumps.
  10. Cook until thickened, then season with salt and plenty of black pepper.
