For the Cookie Dough:
• 1 cup unsalted butter, softened
• ¾ cup granulated sugar
• ¾ cup brown sugar, packed
• 2 large eggs
• 2 tsp vanilla extract
• 2 ¼ cups all-purpose flour
• 1 tsp baking soda
• ¼ tsp salt
• 1 ½ cups chocolate chips (semi-sweet or milk)
For the Cheesecake Filling:
• 8 oz cream cheese, softened
• ⅓ cup granulated sugar
• 1 tsp vanilla extract
• 1 egg yolk

Instructions:
1. Prepare the Cheesecake Filling:
1. In a medium bowl, beat the cream cheese with sugar and vanilla extract until smooth.
2. Add the egg yolk and beat until fully incorporated. Set aside.
2. Make the Cookie Dough:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
5. Fold in the chocolate chips.
3. Assemble the Cookies:
1. Scoop about 1 tablespoon of cookie dough and flatten it slightly.
2. Place about 1 teaspoon of the cheesecake filling in the center of the dough.
3. Top with another tablespoon of cookie dough and seal the edges, making sure the cheesecake filling is completely enclosed.
4. Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are golden. The centers should be soft.
4. Cool and Serve:
• Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
