Ingredients
- 1 cup (225g) unsalted butter, melted
- 2 cups (400g) sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup (120g) all-purpose flour
- 1 cup (100g) cocoa powder
- ½ tsp salt
- 1 cup (175g) chocolate chips
For the chocolate coating:
- 2 cups (350g) semi-sweet chocolate chips
- 2 tbsp vegetable oil or butter
Instructions
- Preheat oven to 180°C (350°F). Line a baking pan with parchment paper.
- In a large bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, then stir in vanilla.
- Sift in flour, cocoa powder, and salt. Mix until just combined, then fold in chocolate chips.
- Pour batter into the pan and spread evenly. Bake for 25–30 minutes or until a toothpick comes out with a few moist crumbs.
- Let brownies cool completely in the pan.
- Melt the chocolate chips with oil or butter in a heatproof bowl (microwave or double boiler), stirring until smooth.
- Pour melted chocolate over the cooled brownies and spread evenly.
- Refrigerate for about 1 hour, or until the chocolate coating is firm.
- Lift from the pan, slice into bars, and serve.
