Chocolate-Covered Brownie Bars

Ingredients

  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1 cup (100g) cocoa powder
  • ½ tsp salt
  • 1 cup (175g) chocolate chips

For the chocolate coating:

  • 2 cups (350g) semi-sweet chocolate chips
  • 2 tbsp vegetable oil or butter

Instructions

  1. Preheat oven to 180°C (350°F). Line a baking pan with parchment paper.
  2. In a large bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, then stir in vanilla.
  3. Sift in flour, cocoa powder, and salt. Mix until just combined, then fold in chocolate chips.
  4. Pour batter into the pan and spread evenly. Bake for 25–30 minutes or until a toothpick comes out with a few moist crumbs.
  5. Let brownies cool completely in the pan.
  6. Melt the chocolate chips with oil or butter in a heatproof bowl (microwave or double boiler), stirring until smooth.
  7. Pour melted chocolate over the cooled brownies and spread evenly.
  8. Refrigerate for about 1 hour, or until the chocolate coating is firm.
  9. Lift from the pan, slice into bars, and serve.
