Crazy Good Casserole

Easy to make with all of your families favorite foods – bacon, cheese, pasta and chicken! Toss in some broccoli or other veggies to make it a main meal dish.

With a family of TEN to feed, I’m often hunting around for new casserole recipes and often I come up with a few of my own. Casserole recipes are fairly simple: grain or pasta + meat + sauce + cheese = delicious dinner. I don’t have a name for this latest creation. Maybe I should just call this “Crazy Good Casserole” – It has chicken, bacon, cheese, creamy saucy goodness… It’s crazy good.

Crazy Good Casserole

Ingredients:

4-5 boneless, skinless chicken breasts
6 strips quality bacon, cooked and crumbled
2 cans cream of chicken soup
2 cups shredded Monterey Jack cheese
1 box (16 ounces) dried spiral pasta
1 tablespoon garlic powder
Salt and pepper, to taste

Preparation:

Cook the Bacon:

Cook the bacon until crispy. Crumble and set aside.
Prepare the Chicken:

Cut the chicken breasts into bite-sized chunks. Cook the chicken in the bacon drippings over medium heat, seasoning with garlic powder, salt, and pepper to taste.
Cook the Pasta:

While the chicken is cooking, prepare the pasta according to the package directions. Drain and return to the pot.
Combine Ingredients:

Preheat your oven to 400°F (200°C) and spray a 9×13-inch baking dish with non-stick cooking spray.
In the pot with the pasta, add the cooked chicken, both cans of cream of chicken soup, and 1 cup of shredded Monterey Jack cheese. Stir until well mixed.
Assemble the Casserole:

Pour the pasta mixture into the prepared baking dish. Sprinkle the crumbled bacon evenly over the top.
Top with the remaining cup of Monterey Jack cheese.
Bake:

Bake in the preheated oven for about 20 minutes, or until the cheese is melted and starting to brown on top.
