Ingredients
4 cups corn kernels (fresh, canned, or thawed frozen)
½ cup red bell pepper, diced
¼ cup red onion, finely diced
½ cup mayonnaise
¼ cup sour cream
1 tablespoon fresh lime juice
1 teaspoon sugar
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley or cilantro
Instructions
If using fresh corn, cook briefly in boiling water for 3–4 minutes, then cool completely. In a large bowl, combine corn, red bell pepper, and red onion. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, sugar, salt, and black pepper until smooth. Pour dressing over the corn mixture and stir until evenly coated. Fold in fresh parsley or cilantro. Refrigerate for at least 30 minutes before serving to allow flavors to blend. Stir before serving and adjust seasoning if needed.
