Crispy Chickpea Sticks

Ingredients

  • 1½ cups chickpea flour
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • ½ cup breadcrumbs (optional, for extra crunch)
  • 2 tablespoons grated Parmesan (optional)
  • Cooking spray or 2 tablespoons olive oil for brushing

Instructions

  1. Line an 8×8-inch baking dish or tray with parchment paper and lightly grease it.
  2. In a saucepan, whisk together the chickpea flour, water, olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper until smooth.
  3. Place the saucepan over medium heat, stirring constantly for 8–10 minutes until the mixture becomes thick and pulls away from the sides of the pan.
  4. Stir in the chopped parsley.
  5. Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.
  6. Let it cool for 15–20 minutes, then refrigerate for at least 1 hour until firm.
  7. Remove from the pan and cut into sticks.
  8. If desired, combine the breadcrumbs and Parmesan, then lightly coat each stick.
  9. Arrange the sticks on a baking sheet, brush lightly with olive oil or spray with cooking spray.
  10. Bake at 425°F (220°C) for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  11. For an air fryer, cook at 390°F (200°C) for 12–15 minutes, turning halfway through.
  12. Serve hot with your favorite dipping sauce.

  • Chill the mixture completely before slicing for clean, even sticks.
  • Add Italian seasoning, chili flakes, or curry powder for different flavor variations.
  • Reheat leftovers in the oven or air fryer to restore crispiness.
  • Freeze uncooked sticks for up to 2 months and cook directly from frozen, adding a few extra minutes.
