Ingredients

• 2 cans (6 oz each) salmon (drained and flaked)

• 1/4 cup yellow onion (finely chopped)

• 1/4 cup bell pepper (finely chopped)

• 1/4 cup parsley (chopped)

• 1 egg (beaten)

• 1/4 cup mayonnaise

• 1 tbsp Dijon mustard (optional)

• 1 tsp Worcestershire sauce

• 1 tsp garlic powder

• 1/2 tsp onion powder

• 1/4 tsp black pepper

• 1/4 tsp cayenne pepper (optional for heat)

• 1 cup bread crumbs (panko or regular)

• 1/4 cup cornmeal (for extra crispness)

Vegetable oil (for frying)

Instructions

1️⃣ Prep the Salmon: Drain and flake the canned salmon into a medium bowl. Remove any bones or skin if desired.

2️⃣ Mix the Ingredients: Add the chopped onion, bell pepper, parsley, egg, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, black pepper, and cayenne pepper (if using) to the bowl with the salmon. Stir until everything is well combined.

3️⃣ Form Patties: Slowly add the bread crumbs and cornmeal, mixing until the mixture holds together but isn’t too dry. Form the mixture into small patties, about 2-3 inches wide. You should get around 6-8 patties, depending on size.

4️⃣ Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.

5️⃣ Fry the Patties: Once the oil is hot, carefully place the patties in the skillet. Fry for 3-4 minutes on each side or until golden brown and crispy.

6️⃣ Drain: Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

7️⃣ Serve: Serve hot with your favorite dipping sauce, over rice, or alongside a fresh salad. Enjoy your crispy, flavorful salmon patties!

Notes

• For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.

• If you prefer a lighter version, you can bake the patties at 375°F for about 20 minutes, flipping halfway through.

• Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat them in a skillet to maintain their crispy texture.

These Crispy Southern Fried Salmon Patties are a delicious and versatile dish, packed with flavor and crispy perfection! They’re a great way to enjoy salmon in a fun, new way! 😋🍴
