Ingredients

1 ½ lbs beef sirloin or flank steak, sliced thin

2 bell peppers (any color), sliced

1 medium onion, sliced

3 cloves garlic, minced

3/4 cup beef broth

1/3 cup soy sauce

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 teaspoon ground ginger

1/2 teaspoon black pepper

2 tablespoons cornstarch

2 tablespoons cold water

Instructions

Place sliced beef, bell peppers, onion, and garlic into the crock pot. In a bowl, whisk together beef broth, soy sauce, brown sugar, Worcestershire sauce, ginger, and black pepper. Pour the sauce over the beef and vegetables and stir gently to coat. Cover and cook on low for 5–6 hours or on high for 3–4 hours, until the beef is tender.

In the last 30 minutes of cooking, mix cornstarch with cold water and stir it into the crock pot to thicken the sauce. Cover and continue cooking until the sauce is glossy and slightly thickened. Serve hot over steamed rice and enjoy.
