Crockpot Chicken Stuffing

This meal is ideal for family dinners, meal prep, or even when you want something comforting without spending much time in the kitchen. It’s also easy to customize by adding vegetables like green beans or carrots. Once it’s done, you’ll have a complete, satisfying dish all in one pot.

Ingredients
2 to 3 boneless, skinless chicken breasts
1 box stuffing mix
1 cup chicken broth
1 can cream of chicken soup
1/2 cup sour cream
1 teaspoon garlic powder
Salt and black pepper to taste
1/2 teaspoon dried thyme (optional)
1 cup green beans or mixed vegetables (optional)

Instructions
Lightly grease the crockpot.
Place the chicken breasts at the bottom of the slow cooker. Season with salt, pepper, garlic powder, and thyme.
In a bowl, mix the stuffing mix with chicken broth until moistened.
In another bowl, combine the cream of chicken soup and sour cream until smooth.
Spread the soup mixture over the chicken.
Add the stuffing mixture on top, spreading it evenly.
If using vegetables, add them over or around the stuffing.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
Once done, you can shred the chicken slightly or leave it whole, then mix gently before serving if desired.
