Delicious Creamy Beef Taco Soup

Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)

1 can (15 oz) diced tomatoes with green chiles

1 can (15 oz) corn, drained

1 can (15 oz) black beans, drained and rinsed

1 can (8 oz) tomato sauce

3 cups beef broth

4 oz cream cheese, softened

½ cup heavy cream or half-and-half

Salt and pepper to taste

Instructions

In a large pot over medium heat, cook ground beef and onion until beef is browned and onion is softened. Drain excess grease if needed. Stir in garlic and cook for 30 seconds. Add taco seasoning, diced tomatoes, corn, black beans, tomato sauce, and beef broth. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes. Lower heat and stir in cream cheese until melted and smooth. Add heavy cream and simmer for 5 more minutes until creamy and slightly thickened. Season with salt and pepper as needed. Serve hot with your favorite toppings.
