Ingredients
• 2 cups cooked jasmine rice (preferably day-old)
• 1 lb shrimp, peeled and deveined
• 2 tbsp vegetable oil
• ½ cup diced onion
• ½ cup diced carrots
• ½ cup peas
• 2 cloves garlic, minced
• 2 eggs, beaten
• 3 tbsp soy sauce
• 1 tbsp oyster sauce (optional)
• 1 tsp sesame oil
• ½ tsp black pepper
• 2 green onions, chopped
• ½ tsp red pepper flakes (optional, for spice)
Instructions
1. Prepare the Rice & Shrimp: If using freshly cooked rice, spread it out to cool before frying. Season shrimp with a pinch of salt and pepper.
2. Sauté the Shrimp: Heat 1 tbsp oil in a large pan or wok over medium-high heat. Cook shrimp for 2-3 minutes per side until pink. Remove and set aside.
3. Cook the Veggies: Add the remaining oil, then sauté onion, carrots, and peas until softened. Add garlic and cook for 30 seconds.
4. Scramble the Eggs: Push veggies to one side and pour beaten eggs into the pan. Stir gently until scrambled, then mix with the veggies.
5. Fry the Rice: Add rice, soy sauce, oyster sauce, black pepper, and sesame oil. Stir-fry for 3-4 minutes, breaking up clumps.
6. Combine Everything: Return shrimp to the pan, stir well, and cook for another minute.
7. Garnish & Serve: Top with green onions and red pepper flakes. Serve hot and enjoy!
