Ingredients:
• For the cake:
• 1 box chocolate cake mix (preferably Devil’s Food)
• 3 large eggs
• 1 cup water
• 1/2 cup vegetable oil
• 1 tsp vanilla extract
• For the filling:
• 1 cup heavy cream
• 1/4 cup powdered sugar
• 1 tsp vanilla extract
• For the chocolate ganache topping:
• 1 cup semi-sweet chocolate chips
• 1/2 cup heavy cream
Instructions:
1. Preheat your oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
2. Prepare the cake batter:
In a large bowl, mix together the cake mix, eggs, water, oil, and vanilla extract. Stir until well combined. Pour the batter evenly into the prepared cake pans.
3. Bake the cake:
Bake the cakes in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool completely in the pans for 10 minutes before transferring them to wire racks to cool completely.
4. Make the filling:
While the cake is cooling, whip the heavy cream, powdered sugar, and vanilla extract in a medium bowl until stiff peaks form. Set aside.
5. Prepare the chocolate ganache:
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chocolate chips. Stir until the chocolate is completely melted and the ganache is smooth.
6. Assemble the cake:
Once the cakes have completely cooled, place one cake layer on a serving plate. Spread the whipped cream filling evenly on top of the first layer. Place the second cake layer on top.
7. Top with ganache:
Pour the warm chocolate ganache over the top of the cake, spreading it to the edges to create a smooth, shiny topping.
8. Chill and serve:
Place the cake in the fridge for about 30 minutes to allow the ganache to set. Once it has set, slice and serve your delicious homemade Ding Dong Cake!
