Ingredients

1 pound ground beef

1 packet taco seasoning

1 head iceberg lettuce, chopped

1½ cups cherry tomatoes, halved

1 cup shredded cheddar or Mexican-blend cheese

½ cup red onion, finely chopped

1 can (15 oz) kidney beans or black beans, drained and rinsed

1 cup crushed Doritos (Nacho Cheese or Cool Ranch)

For the dressing

1 cup Catalina dressing or French dressing

Optional toppings: sour cream, sliced black olives, jalapeños, avocado, green onions

Instructions

In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease, then add the taco seasoning and water according to the packet instructions. Simmer for a few minutes until well seasoned and slightly thickened, then remove from heat and let cool slightly. In a large bowl, combine the chopped lettuce, tomatoes, cheese, red onion, and beans. Add the seasoned ground beef and toss gently. Just before serving, stir in the crushed Doritos and drizzle with the dressing. Toss lightly to combine, top with optional toppings if desired, and serve immediately for the best crunch.
