Use freshly grated cheese for better meltability. Don’t overcook the cheese or it may become grainy. If the dip gets too thick, stir in a little milk or sour cream to smooth it out.
Ingredients
1 lb ground beef
1/2 cup diced onion
1 packet taco seasoning
1/4 cup water
1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack or pepper jack cheese
1/2 cup sour cream
4 oz cream cheese, softened
1/4 teaspoon garlic powder
Optional: sliced green onions, jalapeños, or olives for garnish

Directions
In a large skillet over medium heat, cook ground beef and diced onion until the beef is browned and onions are tender. Drain excess grease.
Add taco seasoning and water, stir to combine, and simmer for 2–3 minutes.
Stir in Rotel, cheddar, Monterey Jack, sour cream, cream cheese, and garlic powder. Continue cooking, stirring frequently, until everything is melted and smooth.
Transfer to a serving dish or keep warm in a slow cooker. Garnish with green onions or jalapeños if desired. Serve with Doritos.
For variations, swap the ground beef for ground turkey or sausage, or make it vegetarian with black beans or meat substitutes. Add corn, black olives, or hot sauce to customize the flavor. You can also layer this dip in a baking dish and top with extra cheese, then bake until bubbly for a hot party dip twist.
