Fresh Pot of Beans and Tortillas

Here’s a straightforward way to make this comforting classic:

Ingredients:

  • 2 cups dried pinto or black beans
  • 6 cups water
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 bay leaf
  • Salt, to taste
  • Fresh cilantro, optional
  • 8–10 corn or flour tortillas

Instructions:

  1. Rinse the beans and soak overnight or use a quick-soak method (boil 5 minutes, then sit 1 hour).
  2. Drain and rinse beans, then place in a large pot with water, onion, garlic, and bay leaf.
  3. Bring to a boil, then reduce to a simmer. Cook 1–1.5 hours until beans are tender.
  4. Remove bay leaf and season with salt. Stir in chopped cilantro if desired.
  5. Warm tortillas on a skillet for 30–60 seconds per side.
  6. Serve beans alongside tortillas or spoon beans into tortillas for a simple taco.
