Ingredients
For the Fried Catfish
4 catfish fillets
1 cup buttermilk
1 cup cornmeal
½ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon black pepper
Oil for frying
For the Spaghetti
12 oz spaghetti noodles
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
3 cups marinara sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
½ cup grated Parmesan (optional)
Instructions
Start with the spaghetti. Cook noodles according to package directions. Drain and set aside.
In a skillet, brown ground beef with diced onion until cooked through. Add garlic and cook 30 seconds. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer 10–15 minutes. Toss with cooked spaghetti.
For the catfish, soak fillets in buttermilk for 20–30 minutes.
Mix cornmeal, flour, paprika, garlic powder, cayenne, salt, and pepper in a shallow dish.
Heat oil to 350°F (175°C). Dredge catfish in the cornmeal mixture and fry 3–4 minutes per side until golden and crispy. Drain on paper towels.
Plate the crispy catfish alongside a generous serving of spaghetti. Garnish with parsley and serve hot for a hearty Southern-inspired combo.
