Ingredients:

• 1 ½ cups almond flour

• ½ cup gluten-free all-purpose flour

• 1 tsp baking powder

• ¼ tsp salt

• 1 cup ricotta cheese (drained)

• 1/3 cup powdered sugar

• 1 large egg

• 1 tsp vanilla extract

• 1 tbsp almond extract

• 2 tbsp unsalted butter (melted)

• 1/3 cup sliced almonds (for topping)

• Extra powdered sugar for dusting (optional)

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Mix Dry Ingredients:

In a large bowl, whisk together the almond flour, gluten-free flour, baking powder, and salt until well combined.

3. Combine Wet Ingredients:

In another bowl, mix the ricotta cheese, powdered sugar, egg, vanilla extract, almond extract, and melted butter. Stir until smooth and creamy.

4. Combine Wet and Dry Mixtures:

Gradually add the wet ingredients to the dry mixture, stirring until everything is fully incorporated. The dough will be soft and sticky, but that’s perfectly fine!

5. Form the Pillows:

Using your hands or a spoon, scoop out portions of the dough and gently shape them into small pillow-like mounds, about 1 ½ inches in diameter, and place them on the prepared baking sheet.

6. Top with Almonds:

Press a few sliced almonds onto the top of each dough pillow for a lovely crunch and visual appeal.

7. Bake:

Bake in the preheated oven for 15-18 minutes or until the edges are golden brown and the pillows have puffed up slightly.

8. Cool and Dust:
