Today I am sharing another childhood favorite, a summer tradition at my grandparents’ for each and every barbecue – Cucumber Salad! Crisp summer cucumbers and onions thinly sliced, tossed in a simple yummy vinegar, sugar and water dressing.

Cucumber Salad – An old-school classic recipe. Refreshing, cool and crisp, perfect on hot summer days. This is the perfect side dish for any family gathering, picnic, BBQ or potluck – even better, it’s budget friendly!

 

I made a bunch of fresh salads for our 4th of July celebration this year and decided to include this yummy favorite. It’s seriously amazing! Grandma’s Creamy Italian Cucumber Salad is just as easy to make as her traditional, classic cucumber salad, but with an Italian twist. We love the addition of two kinds of fresh tomatoes, zesty seasonings, and creamy Italian dressing in this delicious salad. Keep it in mind for your next picnic or potluck. This makes a BIG bowl, but the recipe can easily be cut in half for a smaller crowd.

It’s easy, uses up abundant produce from the garden, and can be made ahead of time. You can scale it up to feed a huge crowd at a family get-together, or make it in this dainty little portion for your supper. I’ve made it in a big Tupperware bowl with a lid, just tossing all the ingredients in, closing it up, and shaking the bowl to mix. Talk about simple!

 

Ingredients:
3 Med. Cucumbers Peeled and Sliced 1/4″
1 Med. Onion sliced and separate into rings
3 Med. tomatoes cut into wedges
1/2 C. Vinegar
1/4 C. Sugar or Stevia
1 C. water
1/4 C. olive oil
2 tsp.salt
1 tsp. ground pepper.

Directions:
Combine all in a large bowl, toss making sure everything is coated well. Refrigerate for at least 2 hrs before serving.
