Ingredients
1 lb ground beef
2 medium potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
1 cup roasted green chiles, chopped
1 can (8 oz) tomato sauce
½ cup beef broth or water
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon dried oregano
Salt and black pepper to taste
2 tablespoons olive oil
Instructions
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, then stir in garlic and cook for 30 seconds. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary. Stir in diced potatoes, roasted green chiles, tomato sauce, broth, cumin, paprika, oregano, salt, and pepper. Mix well to combine. Cover and simmer on low for 20–25 minutes, stirring occasionally, until potatoes are tender and the sauce has thickened. Serve hot over rice or with warm tortillas.
