Hawaiian Pineapple Pork

If you are looking to try something different for dinner, this recipe for grilled Hawaiian-flavored pork chops is a nice change from the ordinary. These pork chops get a blast of flavor and an extra dose of sweetness from the grilled pineapple.

(Grilling pineapple really brings out the sweetness and adds a whole new layer of flavor.) Both the pork chops and the pineapple slices are marinated in a mixture of soy sauce, onion, garlic, and brown sugar to infuse the sweet and salty flavors into the meat and fruit. This results in grilled pork chops and pineapple slices with a nice depth of flavor.

Hawaiian pineapple pork loin! If you’ve got your pork and some barbecue sauce and pineapple, then you’re pretty much already in business.

The thinly sliced pork chops do not take long to cook. I brown them on both sides then let them simmer in the sauce for 10 minutes. The result is a super juicy and tender pork chop!

I love to serve this dish with rice to soak up all of that extra sauce. I also use the leftovers for pork and pineapple fried rice! Enjoy!

 

 

Ingredients:
10 thick pork chops (always allow one per person)
12 ounces ketchup (about half a bottle)
1-1/2 cups water
1/2 cup sugar
1/2 cup vinegar
Salt and pepper to taste
1 small can crushed pineapple

Directions:

  • Brown the pork chops slowly in a greased skillet just to a light golden brown; remove and transfer to an oven pan. Chops should be arranged in a single layer.
  • In a saucepan, mix the remaining ingredients, except for the pineapple; bring to a boil and cook to thicken.
  • Pour the sauce over the pork chops; top with the crushed pineapple, juice and all.
  • Cover with foil and bake in a preheated 275 degree oven for 2-1/2 to 3 hours.

 

Serve with green beans, creamed corn, and rolls.
