Ingredients

2 pounds boneless skinless chicken thighs

1 cup soy sauce

1 cup brown sugar

1 cup water

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

Optional garnish: sliced green onions, sesame seeds

Instructions

In a bowl, whisk together soy sauce, brown sugar, water, garlic, ginger, and sesame oil until the sugar dissolves. Place chicken in a large zip-top bag or shallow dish and pour the marinade over it. Marinate in the refrigerator for at least 8 hours, preferably overnight. Preheat a grill to medium-high heat and lightly oil the grates. Remove chicken from the marinade, letting excess drip off. Grill for 5–7 minutes per side, turning often, until fully cooked and nicely caramelized. Let rest for a few minutes before slicing. Serve with steamed rice and garnish as desired.
