Ingredients
For the Salmon
4 salmon fillets
Salt and black pepper
1 teaspoon paprika
2 tablespoons butter
4 cloves garlic, minced
3 tablespoons honey
1 tablespoon soy sauce
1 tablespoon lemon juice
For the Red Skinned Potatoes
1½ lbs red potatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper
For the Garlic Green Beans
1 lb fresh green beans, trimmed
1 tablespoon olive oil or butter
2 cloves garlic, minced
Salt and pepper
Instructions
Preheat oven to 400°F (200°C). Toss red potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast 30–35 minutes until golden and tender, flipping halfway through.
While potatoes roast, heat a skillet over medium heat. Season salmon with salt, pepper, and paprika. Sear in a lightly oiled pan for 4–5 minutes per side until golden and cooked through. Remove and set aside.
In the same pan, melt butter. Add minced garlic and sauté 30 seconds until fragrant. Stir in honey, soy sauce, and lemon juice. Simmer 2–3 minutes until slightly thickened. Return salmon to the pan and spoon sauce over the fillets.
In a separate skillet, heat olive oil or butter over medium heat. Add green beans and sauté 4–5 minutes. Stir in garlic and cook another minute. Season with salt and pepper.
Plate the salmon with roasted red potatoes and sautéed green beans. Spoon extra honey garlic butter sauce over the salmon before serving.
