Tips for Success
Use ripe cherry or grape tomatoes for the best flavor. Let the tomato mixture marinate at room temperature for at least 4 hours. Salt your pasta water generously—it brings out the flavor. Toss the hot pasta directly into the tomato mixture to absorb all the flavor. Use high-quality olive oil and parmesan for the best results.
Ingredients
4 cups cherry tomatoes, halved
1/2 cup extra virgin olive oil
5 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes (optional)
1 cup fresh basil leaves, chopped
Salt and freshly ground black pepper, to taste
1 pound angel hair or spaghetti
1 cup freshly grated parmesan cheese
Directions
In a large bowl, combine the halved tomatoes, olive oil, garlic, red pepper flakes (if using), and chopped basil. Season generously with salt and pepper. Let this mixture sit at room temperature for at least 4 hours, stirring occasionally to blend flavors. When ready to serve, bring a large pot of salted water to a boil and cook the pasta until al dente. Drain the pasta and immediately toss it with the tomato mixture in the bowl. Stir in the grated parmesan cheese and toss until everything is well combined. Serve warm or at room temperature with extra basil and parmesan, if desired.
Additional Tips or Variations
Add grilled shrimp or chicken for protein. Use burrata or fresh mozzarella instead of parmesan for a creamier twist. Add a handful of arugula for a peppery bite. Drizzle with balsamic glaze for extra depth. Swap in different herbs like parsley or oregano for a fresh flavor change.
