IRISH BEEF STEW

Ingredients

2 pounds beef chuck, cut into 1½-inch cubes

2 tablespoons vegetable oil

1 onion, chopped

3 cloves garlic, minced

4 cups beef broth

3 medium potatoes, peeled and cut into chunks

3 carrots, sliced

2 tablespoons tomato paste

1 teaspoon dried thyme

1 bay leaf

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Season the beef with salt and pepper, then brown it in batches until all sides are nicely seared. Remove and set aside.
  3. In the same pot, add the chopped onion and cook for about 3–4 minutes until softened.
  4. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  5. Add the tomato paste and cook for 1 minute to deepen the flavor.
  6. Return the beef to the pot and pour in the beef broth.
  7. Stir in the potatoes, carrots, thyme, and bay leaf.
  8. Bring the stew to a gentle boil, then reduce the heat to low, cover, and simmer for about 1½ hours, stirring occasionally.
  9. Cook until the beef is tender and the vegetables are soft.
  10. Remove the bay leaf, garnish with chopped parsley if desired, and serve hot.
