Lasagna Soup Recipe
Ingredients
For the Soup
• 1 pound lean ground beef
• 1/2 pound Italian sausage
• 1 large onion, diced
• 4 garlic cloves, minced
• 2 tablespoons olive oil
• 2 cans (14.5 oz) diced tomatoes
• 1 can (8 oz) tomato sauce
• 2 tablespoons tomato paste
• 6 cups low-sodium chicken broth
• 2 teaspoons Italian seasoning
• 1 teaspoon dried oregano
• 1/2 teaspoon red pepper flakes
• 8-9 lasagna noodles, broken into pieces
• Salt and pepper to taste
Cheese Mixture
• 1 cup ricotta cheese
• 1/2 cup grated Parmesan cheese
• 1 cup shredded mozzarella cheese
• Fresh basil for garnish

Cooking Instructions
Preparing the Soup
1. In a large pot, brown ground beef and sausage over medium-high heat
2. Remove meat and drain excess fat
3. In same pot, sauté onions and garlic in olive oil
4. Add tomato paste and cook for 2 minutes
5. Return meat to pot
6. Add diced tomatoes, broth, and seasonings
7. Bring to boil, then reduce heat
8. Add broken lasagna noodles
9. Simmer until noodles are tender (10-12 minutes)
Cheese Mixture
1. Mix ricotta, Parmesan, and half the mozzarella in a separate bowl
Serving
1. Ladle soup into bowls
2. Top with cheese mixture
3. Sprinkle remaining mozzarella
4. Garnish with fresh basil
Pro Tips
• Break noodles into 1-2 inch pieces
• Can substitute chicken broth with vegetable broth
• Optional: Add spinach for extra nutrition
