Ingredients
- 1 lb (450g) ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (800g) crushed tomatoes
- 2 tbsp tomato paste
- 4 cups (1 liter) chicken or beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley or basil for garnish
Instructions
- In a large pot, cook the ground beef or sausage over medium heat until browned. Drain excess fat.
- Add diced onion and cook until soft, about 3–4 minutes. Stir in garlic and cook for 1 minute.
- Add tomato paste, crushed tomatoes, broth, basil, oregano, salt, and pepper. Stir well and bring to a simmer.
- Add broken lasagna noodles and cook for 10–12 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
- In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
- Serve the soup hot and top each bowl with a generous spoonful of the cheese mixture.
- Garnish with fresh herbs and enjoy with crusty bread.
