Lasagna soup

Ingredients

  • 1 lb (450g) ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (800g) crushed tomatoes
  • 2 tbsp tomato paste
  • 4 cups (1 liter) chicken or beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley or basil for garnish

Instructions

  1. In a large pot, cook the ground beef or sausage over medium heat until browned. Drain excess fat.
  2. Add diced onion and cook until soft, about 3–4 minutes. Stir in garlic and cook for 1 minute.
  3. Add tomato paste, crushed tomatoes, broth, basil, oregano, salt, and pepper. Stir well and bring to a simmer.
  4. Add broken lasagna noodles and cook for 10–12 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
  5. In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  6. Serve the soup hot and top each bowl with a generous spoonful of the cheese mixture.
  7. Garnish with fresh herbs and enjoy with crusty bread.
