Tips for Success

Ingredients
2 cups cold leftover mashed potatoes
1 cup shredded cheddar cheese
1 large egg
1/4 cup grated Parmesan cheese
2 tablespoons chopped chives or green onions (optional)
Salt and pepper to taste
Non-stick spray or melted butter for greasing
Directions
Preheat oven to 400°F and lightly grease a muffin tin.
In a large bowl, combine mashed potatoes, cheddar cheese, egg, Parmesan, and chives. Mix until well blended.
Season with salt and pepper as needed.
Spoon the mixture into the muffin cups, filling each about 3/4 full.
Bake for 20–25 minutes, or until the tops are golden and crispy.
Let cool in the pan for 5 minutes before gently removing with a spoon or knife.
Serve warm as a snack, appetizer, or side dish.
