1 lb shrimp, peeled and deveined

1 tablespoon olive oil

3 cloves garlic, minced

Zest and juice of 1 lemon

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

For the Rice

2 cups cooked white or jasmine rice

Salt to taste

For the Avocado Cilantro Cream

1 ripe avocado

½ cup fresh cilantro

1 clove garlic

2 tablespoons lemon or lime juice

3–4 tablespoons water (to thin)

Salt to taste

Instructions

Cook the rice according to package instructions, season lightly with salt, and set aside.

In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add shrimp, paprika, salt, and pepper. Cook for 2–3 minutes per side until shrimp turn pink and are cooked through. Finish with lemon zest and juice. Remove from heat.
