Another great advantage is that this dish is budget-friendly and easy to scale up. Whether you’re cooking for two or feeding a crowd, the process stays simple. These breakfast potatoes also work incredibly well for brunch, meal prep, or as a side dish for dinner with grilled meats, chicken, or burgers. Their smoky, savory, slightly sweet profile makes them universally loved. Once you taste them hot from the skillet—crispy, flavorful, and filled with bacon—you’ll understand why this recipe becomes a staple in so many kitchens.
