Ingredients:
• 10 cups of popped popcorn (about 1/2 cup unpopped kernels)
• 1 cup (2 sticks) unsalted butter
• 1 cup brown sugar, packed
• 1/2 cup light corn syrup
• 1/2 teaspoon salt
• 1 teaspoon vanilla extract
• 1/2 teaspoon baking soda
• 2 cups mini marshmallows
Instructions:
1. Preheat Oven: Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray. Set aside.
2. Pop the Popcorn: Pop your popcorn using your preferred method (air popper, stovetop, or microwave). Place the popped popcorn in a large bowl, making sure to remove any unpopped kernels.
3. Make the Caramel Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, add the brown sugar, corn syrup, and salt. Stir occasionally and bring the mixture to a boil. Let it boil for 4-5 minutes without stirring.
4. Add Vanilla and Baking Soda: Remove the saucepan from the heat and stir in the vanilla extract and baking soda. The mixture will bubble up, so be careful.
5. Pour the Caramel Over Popcorn: Immediately pour the caramel sauce over the popped popcorn. Gently toss the popcorn to coat evenly.
6. Bake the Caramel Corn: Transfer the caramel-coated popcorn to the prepared baking sheet and spread it into an even layer. Place it in the preheated oven and bake for 45 minutes, stirring every 15 minutes to coat evenly.
7. Add Marshmallows: After removing the caramel corn from the oven, while it’s still warm, immediately add the mini marshmallows to the hot caramel corn. Stir to combine. The heat from the caramel corn will melt the marshmallows, creating a gooey, sticky treat.
8. Cool and Serve: Let the marshmallow caramel corn cool completely on the baking sheet. Once cool, break it apart into pieces and enjoy!
Storage: Store in an airtight container for up to 1 week.
