MEXICAN PIZZA RECIPE

Ingredients:

For the Pizza Base:

• 4 large flour tortillas

• 1 cup refried beans

• 1 cup cooked ground beef or shredded chicken (seasoned with taco seasoning)

• 1 cup shredded Mexican cheese blend

• ½ cup diced tomatoes

• ¼ cup sliced black olives (optional)

• ¼ cup chopped green onions

• ¼ cup diced red onions

• ½ cup enchilada sauce or taco sauce

• ¼ cup sour cream (for garnish)

• Fresh cilantro (for garnish)

Instructions:

1. Preheat Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare the Tortillas: Place the tortillas on the baking sheet and bake for about 5 minutes or until they become slightly crispy. Remove and set aside.

3. Assemble the Base: Spread an even layer of refried beans on two tortillas. Add the cooked ground beef or shredded chicken on top.

4. Stack & Sauce: Place the remaining tortillas on top to create a “pizza” stack. Spread enchilada sauce or taco sauce evenly over the top.

5. Add Toppings: Sprinkle the shredded cheese, diced tomatoes, black olives, and red onions evenly over the sauce-covered tortillas.

6. Bake to Perfection: Place the pizzas back in the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.

7. Garnish & Serve: Remove from the oven and top with chopped green onions, a drizzle of sour cream, and fresh cilantro. Slice into wedges and serve warm.
