Tips for Success
Be sure to drain any excess grease from the cooked beef before mixing it with the other ingredients. Crush the tortilla chips lightly so you still get some good crunch in the casserole. If you like a little heat, feel free to add diced jalapeños or a sprinkle of cayenne pepper.
Ingredients
1 pound ground beef
1 small onion, diced
1 can cream of chicken soup
1 can cream of mushroom soup
1 can diced tomatoes with green chilies, undrained
1 cup sour cream
2 cups shredded cheddar cheese, divided
3 cups crushed tortilla chips
1 packet taco seasoning
Directions
Preheat your oven to 350°F. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and cooked through. Drain any excess grease. Stir in the taco seasoning, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, and sour cream. Mix until well combined. In a greased 9×13-inch baking dish, spread half of the crushed tortilla chips across the bottom. Layer half of the beef mixture over the chips, then sprinkle with half of the shredded cheese. Repeat the layers with the remaining chips, beef mixture, and cheese. Bake uncovered for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
Additional Tips or Variations
Swap ground beef for ground turkey or shredded chicken for a lighter option. Add a can of black beans or corn for extra texture and flavor. Top with chopped green onions, fresh cilantro, or sliced jalapeños just before serving for a fresh finish.
