One-Bowl Apple Cake is so simple and easy that you can whip it up any time you need a dessert to feed a crowd in a hurry. Serve this rich, moist apple cake, warm from the oven with a scoop of vanilla ice cream, freshly whipped whip cream, and even a drizzle of your favorite caramel syrup. This dish is great any time of year when apples are at their sweetest.

Although baking is becoming easier and less time-consuming for me, I will forever adore simple desserts. Sometimes you’ll hear me say it’s because I just love classic, nostalgic dishes, but if I want to be completely honest, my laziness probably has something to do with it. Plus there’s just NEVER enough time for anything (how many times have you said the exact thing just this month? Exactly!).

Ingredients:
2 eggs
1 3/4 cups sugar
2 heaping teaspoons cinnamon
1/2 cup oil
6 medium Gala or Fuji or Honey Crisp apples
2 cups flour
2 teaspoons baking soda

Directions:

Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.) Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients. Pour mixture into a greased one 9×13 or two 9″ round pans. Bake for approximately 55 minutes.
