Ingredients
1 cup creamy peanut butter
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
1/4 teaspoon salt
2 cups semi-sweet or dark chocolate chips
1 tablespoon coconut oil (optional)
Directions
In a large bowl, mix peanut butter, softened butter, vanilla extract, salt, and powdered sugar until well combined and dough-like in texture. Chill the mixture for 15–20 minutes to firm up. Line a baking sheet with parchment paper. Scoop and roll the peanut butter mixture into 1-inch balls and place them on the baking sheet. Chill again for 10–15 minutes. Melt the chocolate chips with coconut oil in a microwave-safe bowl in 30-second increments, stirring between each, until smooth. Using a fork or dipping tool, dip each peanut butter ball into the melted chocolate, letting the excess drip off before placing it back on the parchment. Chill in the fridge until chocolate is fully set, about 30 minutes.

For a crunchy texture, add crushed graham crackers or rice cereal to the peanut butter mixture
Use almond or cashew butter instead of peanut butter for a different flavor
