Pineapple Chicken and Rice

Pineapple Chicken and Rice Dinner Recipe. Tender chicken cooked in a sweet pineapple honey Dijon sauce and served over rice.

It is time for dinner! It is always great to have a chicken dinner recipe on hand. Especially a simple one with common ingredients. I typically serve this chicken recipe over rice and that is it! No other sides are needed. If I do add a side it is steamed broccoli or a vegetable medley.

In the recipe, cornstarch is used to thicken the sauce. Below I instruct you to mix together the cornstarch and some pineapple juice and set aside. While the cornstarch and pineapple juice sit it will start to thicken. Before you pour it into the pan give it another stir to loosen it up.

Pineapple Chicken and Rice
Ingredients:

1 ½ pounds boneless chicken breasts
1 teaspoon dried thyme
½ teaspoon salt
⅛ teaspoon pepper
1 tablespoon vegetable oil
1 (20 oz) can sliced pineapple, juice reserved
1 tablespoon cornstarch
¼ cup Dijon mustard
¼ cup honey
2 garlic cloves, minced
4 servings of cooked rice
Instructions:

Season the Chicken:

Sprinkle the chicken breasts with dried thyme, salt, and pepper.
Brown the Chicken:

Heat vegetable oil in a large skillet over medium heat. Add the chicken breasts and cook until browned on both sides.
Prepare the Pineapple Juice:

Drain the pineapple slices, reserving the juice. Set the pineapple slices aside.
Make the Cornstarch Mixture:

In a small bowl, combine 2 oz of the reserved pineapple juice with the cornstarch. Set aside.
Prepare the Sauce:

In a separate bowl, mix the remaining pineapple juice with Dijon mustard, honey, and minced garlic.
Cook the Chicken:

Add the Dijon mixture to the skillet with the chicken. Reduce the heat, cover, and simmer for 15 minutes.
Remove the Chicken:

Take the chicken out of the skillet and set aside.
Thicken the Sauce:

Stir the cornstarch mixture again and add it to the skillet. Bring to a boil, stirring continuously until the sauce thickens, about 2 minutes.
Coat the Chicken:

Reduce the heat and return the chicken to the skillet, flipping to coat it well with the sauce.
Heat the Pineapple:

Add the pineapple slices to the skillet, placing them on and around the chicken. Cover and heat through for 2-3 minutes.
Serve:

Serve the pineapple chicken over cooked rice. Enjoy!
