RITZ CRACKER SMORES COOKIES

Ingredients

1 sleeve Ritz crackers (about 30 crackers)

15 large marshmallows, cut in half

15 squares milk chocolate or 1 cup chocolate chips

1/2 cup melted chocolate or chocolate candy coating (optional for dipping)

Sprinkles or crushed graham crackers (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Arrange half of the Ritz crackers on the baking sheet with the flat side facing up.
  3. Place a half marshmallow on each cracker, cut side down.
  4. Bake for 3–4 minutes, just until the marshmallows begin to puff and soften.
  5. Remove the tray from the oven and immediately press a piece of chocolate onto each marshmallow.
  6. Top with another Ritz cracker and gently press to create a sandwich cookie.
  7. Allow the cookies to cool for a few minutes so the chocolate melts and holds everything together.
  8. If desired, dip half of each cookie in melted chocolate and add sprinkles or crushed graham crackers.
  9. Let the chocolate set before serving.
