Ingredients:
• 1 lb (450g) breakfast sausage (pork, turkey, or your favorite kind)
• 2 cups Bisquick baking mix
• 1 cup shredded cheddar cheese
• 4 large eggs
• 1/4 cup milk
• Salt and pepper to taste
• Optional: chopped green onions, diced bell peppers, or cooked spinach for extra flavor
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease or line a 12-cup muffin tin.
2. Cook the sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease and let cool slightly.
3. In a large bowl, whisk together eggs and milk. Stir in Bisquick, cheese, and cooked sausage. Add salt, pepper, and any optional add-ins you like.
4. Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
5. Bake for 20–25 minutes, or until muffins are golden and a toothpick inserted in the center comes out clean.
6. Cool slightly before removing from the pan. Serve warm or store in an airtight container in the fridge for up to 4 days.
