Ingredients
1 lb smoked sausage or kielbasa, sliced
4 medium potatoes, diced
1 large onion, sliced
2 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
Salt and pepper to taste
2 tbsp chopped parsley
Instructions
Heat a large skillet over medium-high heat and add 1 tbsp oil. Sear the sausage slices until browned on both sides. Remove and set aside.
Add the remaining oil, then add potatoes. Cook until golden and tender, about 12–15 minutes.
Add sliced onions and cook until caramelized and soft.
Return the sausage to the pan, sprinkle paprika, garlic powder, salt, and pepper. Toss everything together and cook 3–5 more minutes.
Finish with chopped parsley and serve hot.
