Ingredients:

  • 2 lbs Lean Ground Beef
  • ½ C Onions (chopped)
  • ¼ C Red Bell Peppers (chopped)
  • ¼ C Green Bell Peppers (chopped)
  • 1 T Salt, Pepper, Garlic Salt
  • ½ T Dry Mustard
  • ½ C prepared Cheese Sauce, see recipe under, “Sauces”
  • ½ C Shredded Cheddar Cheese or use your favorite cheese

For Sloppy Joe Sauce:

  • ½ C Ketchup
  • 3 T Worcestershire Sauce
  • 1 T Brown Sugar
  • ½ T Salt, Pepper, Onion Powder and Garlic Salt
  • 4-6 Large Flour Tortillas (Wheat can be substituted)
  • 1 T Oil

Instructions:

  1. Make the Sloppy Joe Sauce: In a small bowl, combine the ketchup, Worcestershire sauce, brown sugar, and seasonings. Set aside.
  2. Cook the Beef and Vegetables: In a large skillet, brown the ground beef. Drain any excess grease. Add the chopped onions and bell peppers and cook until softened.
  3. Combine: Pour the sloppy joe sauce over the beef and vegetable mixture. Stir to combine and simmer for a few minutes to allow the flavors to meld.
  4. Assemble the Burritos: Warm the tortillas in a microwave or on a dry skillet. Fill each tortilla with a generous amount of the sloppy joe mixture and top with shredded cheese. Fold the sides of the tortilla and roll it up tightly.
  5. Grill or Pan-Fry: Heat a grill or skillet over medium heat. Brush the burritos with oil and cook until golden brown and heated through, turning occasionally.
