Slow Cooker Ravioli Lasagna Recipe

Ingredients
25 oz. frozen ravioli – DO NOT THAW (I use 5 cheese)
1 lb. ground beef (can use mild sausage)
1 cup white onion, diced
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/2 tsp. dried leaf oregano (not ground)
24 oz. marinara sauce (I use Rao’s)
8 oz. shredded mozzarella cheese (2 cups)
Instructions
1. Brown the Ground Beef:
In a large skillet, cook the ground beef (or sausage) over medium heat until browned, breaking it apart with a spoon as it cooks.
Add the diced onion to the skillet and cook for an additional 2-3 minutes, until the onion is translucent.
Season the meat mixture with salt, pepper, garlic powder, and dried oregano, stirring to combine.
2. Layer the Ingredients in the Slow Cooker:
Spread a thin layer of marinara sauce on the bottom of the slow cooker to prevent sticking.
Place a single layer of frozen ravioli on top of the sauce, covering the bottom of the slow cooker.
Spoon a portion of the cooked meat mixture over the ravioli, spreading it out evenly.
Repeat the layers, alternating between ravioli, meat mixture, and marinara sauce, until all ingredients are used, ending with a layer of marinara sauce on top.
3. Cook the Lasagna:
Cover the slow cooker and cook on low heat for 4-5 hours, or until the ravioli is tender and cooked through.
During the last 30 minutes of cooking, sprinkle the shredded mozzarella cheese over the top of the lasagna, allowing it to melt and become gooey.
4. Serve and Enjoy:
Once the lasagna is cooked, serve it directly from the slow cooker, scooping out generous portions onto plates or bowls.
Cook Notes and Variations
For added flavor, consider adding minced garlic, diced bell peppers, or sliced mushrooms to the meat mixture.
Experiment with different types of ravioli, such as spinach and cheese or butternut squash, for a unique twist on this classic dish.
Customize the sauce by using your favorite marinara or tomato sauce, or try making a homemade sauce from scratch for an extra special touch.
Keto Versions and Low-Carb Versions
Keto Version:
Substitute the frozen ravioli with thinly sliced zucchini or eggplant for a low-carb alternative.
Use ground beef or Italian sausage with no added sugars or fillers to keep the carb count low.
Choose a sugar-free marinara sauce or make your own using fresh tomatoes, garlic, and herbs to keep the dish keto-friendly.
Low-Carb Version:
Replace the frozen ravioli with shirataki noodles or cauliflower gnocchi for a low-carb option.
Opt for lean ground turkey or chicken instead of beef or sausage to reduce the fat content.
Use a low-carb marinara sauce or tomato sauce with no added sugars or starches to keep the dish low-carb.
Frequently Asked Questions (FAQs)
1. Can I use fresh ravioli instead of frozen?
While fresh ravioli can be used, frozen ravioli is preferred for this recipe as it holds up better during the slow cooking process. If using fresh ravioli, reduce the cooking time accordingly to prevent overcooking.

2. Can I make this recipe ahead of time?
Yes, this slow cooker ravioli lasagna can be assembled ahead of time and stored in the refrigerator overnight. Simply cover the slow cooker insert with plastic wrap or aluminum foil and refrigerate until ready to cook. Allow the lasagna to come to room temperature before cooking as directed.

3. Can I freeze leftover lasagna?
Absolutely! Leftover lasagna can be frozen for up to 3 months. Allow the lasagna to cool completely, then portion it into individual servings and wrap tightly in plastic wrap and aluminum foil before freezing. To reheat, thaw the lasagna overnight in the refrigerator and bake in the oven until heated through.

4. Can I add vegetables to this recipe?
Yes, feel free to add your favorite vegetables to this slow cooker ravioli lasagna for added flavor and nutrition. Try adding sliced zucchini, bell peppers, spinach, or mushrooms to the meat mixture or layering them between the ravioli and sauce.
